Lamingtons are a traditional Australian treat that can be enjoyed as is or with jam and cream. Purrfect to have with your afternoon tea or as a dessert! 😻
*Just remember furiends, these are for your pawrents and not for kitties, as they contain chocolate!*
🇦🇺 Baked vanilla sponge cake, cooled and cut into squares
🇦🇺 4 cups icing sugar
🇦🇺 1/3 cup cocoa powder
🇦🇺 1 tbsp unsalted butter
🇦🇺 150ml boiling water
🇦🇺 4 cups desiccated coconut
🇦🇺 Strawberry jam
🇦🇺 Cream for whipping
1. Bake a simple vanilla sponge cake in a square or rectangle shape, cool completely and cut into squares. Pop into freezer for 1-2 hours to help hold shape.
2. Add sugar, cocoa powder, butter and boiling water in a bowl and mixy mix to make a chocolate sauce.
3. Add coconut into a shallow bowl or dish and chocolate sauce in a seperate shallow bowl. Using forks, dip cake squares into chocolate sauce and flip to cover all sides, then transfer to coconut and turn to coat. Transfer to a wire rack. Places finished squares in fridge for 30 mins to set.
4. Enjoy as is, or slice open and spread jam and fresh whipped cream on and enjoy with your afternoon tea! Yum! 🍓
