BUTTERBEAN STEW This is one of my kids favourite dinners but one I always forget about. Had some leftover rice from the weekend which I didn’t want to waste, so made this to go with it Honestly this takes about ten mins to make all in one pot. I use my @lecreusetuk wide one for this and then you can let it simmer for as long as you like. I sometimes serve it with crumbled feta on top, but today a simple glug of @terredisanvitouk olive oil and some finely chopped parsley will do. I actually wish I had a crusty baguette to dip in. Ad / NEW RECIPE: WINTER BUDDHA BOWL WITH MISO TAHINI DRESSING⁠ ⁠ I’ve often thought of Buddha bowls as a sort of nourishing pick-and-mix. They tend to combine a selection of delicious different vegetables, pulses, grains and/or nuts and seeds into a lovely bowl and can be warm or cold depending on what you prefer. A colourful feast of different textures and flavours, they’re also great for getting a few extra portions of vegetables into our diets, as well as being a fantastic way of using up leftovers or odd vegetables in the fridge. ⁠ ⁠ I think the key to making a really delicious Buddha Bowl is to bring together all the different components with a wonderful dressing. And if you’re not familiar with tahini dressings, then I urge you to give this one a try. They are deliciously creamy - yet can also be made entirely plant-based - and tahini can provide us with a nutritious source of iron, calcium and unsaturated fats. This one, made with a little miso and @aspallvinegar raw cyder vinegar is a new favourite. It will last for about 4-5 days in the fridge (just pop it into a clean jam jar) and is also wonderful alongside all sorts of vegetable dishes, chicken or fish, so do make a bit extra.⁠ ⁠ The link to the recipe is in my bio, including how to make these delicious dukkah-roasted carrots! 🍵✨Matcha Vanilla Chia Pudding ✨🍵 This pudding is whats dreams that came true look like! It’s so thick and creamy and absolutely delicious. Why drink your morning matcha when you can eat it in a clean, guilt free dessert with a spoon for breakfast? 🤤 HOW TO MAKE IT: Mix 1/2 cup almond milk, 2 tbsp chia seeds, 1 tsp honey, 1 tsp matcha and 1/2 tsp vanilla extract and refrigerate a minimum of 4 hours. Top it with banana slices and coconut shreds. 🤤 I used @teapazmatcha and @navitasorganics chia seeds in a @culinayogurt jar.

🥕BIFE EMPANADO DE CENOURA🥕 Eu sei que no dia a dia todo mundo procura formas saborosas de consumir alimentos saudáveis e é exatamente por isso que essa receita é perfeita! Outro ponto especial dela é ser uma receita que aprendi com a minha vó, dona Lourdes. Que inclusive é uma das razões de eu ter estudado Gastronomia, já passei tardes inteiras com ela na cozinha quando criança - ainda não sei 1/10 de tudo que ela sabe sobre alimentação. E essa era uma forma dela fazer quem não gostava de cenoura, comer. ❤️ INGREDIENTES: - 4 bifes de sua preferência - 1 cenoura grande - 1/2 xícara de azeite - 2 dentes de alho - Sal a gosto - Pimenta do reino a gosto - 1 xícara de farinha de trigo MODO DE PREPARO: em um mixer, bata a cenoura, o azeite, o alho e um pitada de sal até que forme uma pasta (ou até que tudo fique em pedaços bem pequenos). Em um prato, espalhe a farinha. Em outro prato, a pasta de cenoura. Tempere os bifes com sal e pimenta a gosto. Passe o bife plea farinha dos dois lados, em seguida pela pasta e novamente pela farinha. Repita o processo até que todos os bifes sejam empanados assim. Em uma frigideira antiaderente quente, adicione 1 fio de óleo/azeite e frite um bife de cada vez (aproximadamente 4min de cada lado, depende da grossura do seu bife). ⭐️ dica especial: se sua pasta tiver ficado muito “pedaçuda” adicione um pouco mais de azeite e na hora de empanar os bifes, pressione levemente cada um na pasta. Priprema: Prvo umutite jaja,pa dodajte jogurt,prasak za pecivo i brasno. Smesu prebacite u pleh i stavite u rernu da se pece. Kada je gotovo odmah se umota uvpapir za pecenje i tako ostavi da se ohladi. Iseckajte pecurke i stavite u tiganj da se prze. Gotove su kad oneksaju. Onda dodajte brasno,a zatim i mleko. Sve lepo sjedinite,zacinite po ukusu i sklonite sa sporeta. Dodajte i pavlaku,odmah ne morate da cekate da se hladi. Filujte rolat. . CREMA DE BONIATO 🍠🧡 . Boniato (1-2) Zanahoria (2-3) Jengibre en polvo Puerro (1) Agua Pistachos Huevo poché . Salteamos puerro y cuando esté doradito, echamos zanahoria y boniato cortado. Añadimos agua hasta que cubra y dejamos hervir unos 20 min. También le ponemos un poco de jengibre en polvo. Al emplatar decoramos con pistachos triturados y el huevo poché. . Recipe below 🙂 • • • Difficulty: Easy Cost: Low Time: 10 minutes Category: #easyrecipes #pasta #carbonara Rating: 4/5 — INGREDIENTS: •2 large eggs + 2 large egg yolks, room temperature •1 ounce (1/3 packed cup) grated pecorino Romano cheese, plus extra for serving •1 ounce grated parmesan cheese •coursely ground black pepper •1 TBSP olive oil •3.5-4 oz. guanciale or pancetta, diced •12 oz. (3/4 box) spaghetti — HOW TO MAKE IT: 1. In a large pot of boiling, lightly salted water (no more than 1 TBSP of salt), cook your pasta according to package instructions. 2. In a mixing bowl, whisk together the eggs, yolks, and pecorino and parmesan cheeses. Season with a pinch of salt and a generous amount of black pepper. 3. Heat a drizzle of olive oil in a large sauté pan, add the meat, and sauté until the fat renders - on the edge of crispiness, but not hard. Remove pan from heat and set aside. 4. Reserve 1 cup of pasta water before draining pasta. Add cooked pasta to skillet with meat, pour in your egg and cheese mixture, and toss - using the pasta water to break down the sauce and mix in as needed. The residual heat from the pan and pasta water is water makes the sauce creamy and safe to eat! Ibland längtar vi efter smaken av riktigt bra husmanskost. Just idag längtade vi efter kroppkakor med skirat smör och rårörda lingon. Att vi sedan inte kunde låta bli att förändra lite genom att steka lök och fläsk med färsk timjan, hör ju liksom till vårt beteendemönster - att allt alltid kan bli lite roligare! Sedan velade vi lite kring vinet eftersom ingen av oss någonsin druckit vin till kroppkakor tidigare - mjölk och möjligen någon öl. Till slut enades vi om att välja en ekfatslagrad Riesling Avantgarde Trocken 2018 från @weingut_offenstein_erben , som vi hann med att besöka under vår snabba road trip i augusti. Jerusalem Artichokes. ❤️ First timer here! 🙋🏻‍♀️ Haha! 🤣 Also called sunchokes, these gnarly little tubers look a lot like ginger root. ☀️ Although available year-round, the prime season in North America is from October to April, and they are best dug after a light frost. ❄️ Jerusalem artichokes may be eaten raw or cooked. Before eating or cooking, scrub the tubers thoroughly with a vegetable brush. Peeling can be difficult due to the protuberances and is not necessary. The peels are perfectly edible. ❤️ Awesome right? 🤔 However, if you must peel them, slice off the smaller bumpy areas and remove the skin with a vegetable peeler. If you will be eating them cooked, you will find it easier to boil, steam or microwave them whole and unpeeled first, and then peel if necessary. Just a little tip! 😎 This was my very first time working with Jerusalem artichokes from @the_chefs_garden_ohio,therefore I knew I had to get creative in the kitchen and create something special. 👩‍🍳 That is where this special recipe was created! ❤️ I knew I wanted to create a "gratin." Gratin is a culinary technique in which an ingredient is topped with a browned crust, often using breadcrumbs, grated cheese, egg or butter. I used raw cashews to create my gratin in this recipe. 🍝Tomato baked gnocchi 🍝 Not the easiest but very rewarding with perfect little fluff balls at the end!! This is a combo of Jamie Oliver’s gnocchi recipes and my go to tomato sauce recipe which is so versatile (@bbcgoodfood ) For the tomato sauce: 🍶Olive oil 🥫2 tins of chopped tomatoes 🧅1 onion, finely chopped 🧄2 garlic cloves, finely chopped 🍅3 tbsp tomato purée 🍃1 bay leaf 🌱1 tbsp dried oregano 🍚2 tsp brown sugar 🍀Bunch of basil, finely chopped 1. Heat a good glug of olive oil in a low heat. Add the onions and fry for 12-15 mins. 2. Add the garlic and fry for a few more minutes. 3. Add the chopped tomatoes, purée, bay leaf, oregano, brown sugar and some seasoning. 4. Simmer uncovered for 30-35 mins. 5. Depending on what you are going to use this for you may want to blend the sauce (good for pizza bases) or keep it chunky. For the gnocchi I blended it a little so had a bit of a hybrid! 6. After blending (if you are), add the basil and season to taste. Now for the gnocchi.. (serves 4-6) 🥔1kg potatoes (Maris piper or king Edward) 🍚100g 00 flour (plus plenty more for dusting/kneading) 1. Choose potatoes all roughly the same size 2. Boil (with skin on) until they are cooked through and soft 3. Leave to cool. Once cool enough to touch, remove the skins 4. Place through a ricer. Mix with the 100g of flour. Add salt and pepper too. Then mix together with your hands. You may need more flour to stop it being too sticky. 5. Dust the side and then take the dough out the bowl and knead. I used quite a lot of flour at this point to stop the sticking and get a really nice dough. 6. Divide into 4 pieces. Then take each piece and roll into a long sausage shape. 7. Cut the sausage shape into little pillow, these are your gnocchi! 8. You are then meant to roll each piece down a fork or a butter board if you have one. This helps the sauce sticks, but I’ll be honest I skipped this part! 9. Add to boiling water, when it floats it’s cooked! To make the tomato baked gnocchi: 1. Mix some of the sauce with the gnocchi and add to an ovenproof dish. 2. Pour a little more sauce on. Sprinkle on the cheese and place under a high grill. 3. Remove and serve in

COCA DE ESCALIVADA: 1. Para la masa rápida de pizza amasar: 600gr de harina, 200ml de agua, 40gr de aceite y 10gr de sal. También podéis hacerla con 200ml de agua, 10gr de levadura fresca y 600gr de harina y reposar 2h 2. Estirar la masa 3. Añadir los pimientos y berenjena escalivada 40min a 200°C 4. Hornear 200°C 30min 5. The inspiration for this dish was once again some old food, in this case potatoes (is anyone starting to see a recurring them here? 😅). So I decided to cook smtg I’ve been wanting to do for a while now - Gnocchi. Boil the potatoes, peel and mash them. Let it cool down and knead in flour and semolina. Part the dough and roll until around 1 cm / 1/3 inch and cut into small chunks. Drop into boiling water and take them out when they swim. For the sauce I chopped chicken thighs into small chunks, roast them add a generous amount of parmesan and a bit of oat milk. Wait until the liquid has evaporated and add chopped pekan nuts and spinach. Una de las recetas súper fáciles y ricas: merluza con salsa de azafrán 🌺😍 Ingredientes: 800 gramos de merluza fresca y limpia 10 gambones o langostinos grandes 1/3 de cebolla 2 dientes de ajos 1/3 de pimiento italiano verde 1/3 de pimiento italiano rojo Una buena pizca de azafrán 2-3 vasos de agua Aceite de oliva, sal Elaboración: Cortamos y freímos las verduras en una sartén, cuando estén doraditas las retiramos a un vaso de batidora, añadimos 1 vaso de agua y batimos todo hasta que se convierta todo en una salsa homogénea. Volvemos a echar la salsa a la misma sartén o en una rustidera, añadimos más agua, azafrán y cuando se hierve colocamos los trozos de merluza previamente deshuesados. Salamos el guiso un poco, lo tapamos y dejamos unos 10 min a fuego lento para que se haga el pescado. Pasado este tiempo, añadimos los gambones crudos sin cabezas (o langostinos) y seguimos cocinando otros 5 min. El cous-cous de domingo 😍♥️ Ingredientes: 1 pierna del cordero lechal 120 gramos de cous-cous 200 gramos de garbanzos cocidos 2 litros de caldo de carne 1 cebolla 1 zanahoria 1/2 calabacín 1 trozo de calabaza 1 nabo 1 patata grande mediana 1/2 puerro Aceite de oliva, sal Especias: pimentón dulce, pimienta negra, azafrán, cominos, curry, mostaza, jengibre fresco rallado, ajo fresco en trocitos, cúrcuma, canela, hierbas provenzales...un poco de todo Elaboración: Del hueso de la pierna o de cualquier otra carne preparamos el caldo. Freímos los trozos de Cordero troceados hasta que estés dorados. Añadimos la verdura en trozos grandes y la freímos con la carne. Echamos el caldo y todas las especias y lo cocemos todo a fuego lento 10-15 min. Sacamos las verduras, salvo zanahoria, y las reservamos. Seguimos cociendo la carne unos 2,5-3 horas a fuego muy lento, hasta que la carne esté muy blandita. Al final, echamos la verdura reservada previamente, hervimos todo 5 min y apagamos. Con el caldo del guiso preparamos el cous-cous. Trás probar el tartar de atún en muchos sitios he elaborado una receta del mismo que me parece ideal: 300 gramos de atún crudo 1 aguacate grande y bien maduro (en mi caso yo tenía 3 pequeños) Zumo de media lima 1 tallo de cebolleta 4 cucharas soperas de salsa de soja 2 cucharas soperas de aceite de sésamo 4 bolsitas de wasabi (lo compro en Mercadona) 1 cuchara de té de jengibre rallado Aceite de oliva Elaboración: El atún lo congelo por si acaso mínimo 5 días a -22 grados. Luego, al sacarlo del congelador, le dejo 1 hora a descongelarse y ya le corto en pequeños trocitos, así se corta más fácil y más bonito, mientras no se ha descongelado por completo. Preparamos la salsa: mezclamos salsa de soja, aceite de sésamo, cebolleta cortada, jengibre rallado y todo wasabi. Metemos atún cortado en la salsita y lo mezclamos todo bien. Ahora, limpiamos y cortamos aguacates en pequeños trozos, le echamos por encima el zumo de lima y un poco de aceite de oliva. En un anillo primero colocamos la mitad de aguacate, encima colocamos la mitad de atún. Lo repetimos para vuestro acompañante 😉 Y ambos tan felices lo disfrutamos! Hoy hemos comido un delicioso conejo con apio al vino blanco 😋 Ingredientes: 3 muslos de conejo 4 dientes de ajo 3 c.s. de la salsa Worcestershire 2-3 tallos de apio 1 vaso de vino blanco para cocinar 1 vaso de agua Pimienta negra, sal, aceite Elaboración: Aplastamos los ajos con la prensa, lo mezclamos con sal, pimienta y la salsa de Worcestershire, aplicamos esta masa a los muslos de conejo, haciendo pequeños agujeros en algunos sitios, y los dejamos 1 hora macerarse. Luego, freímos los muslos 5 min de cada lado a fuego alto, añadimos vino, 1 vaso de agua y apio cortado en pequeños trocitos. Una vez se rompe a hervir, lo cocinamos con la tapa cerrada una hora hasta que la carne esté bien blandita. Quiches are a great way of ‘packaging’ different ingredients. And this recipe is great because of the simplicity in preparing the filling. Cut 3 onions into rings. In a pan heat up 40 g of butter on medium heat. When it has melted add 3 table spoons of honey and stir it in. Add the onion rings and let them cook on medium heat. In the meantime cube 1 kg of beetroot - I used pre-cooked this time, but will try it raw next time, to add some extra crunch. The cubes should be under 1 cm of side length. When the onions are almost done, add 1/4 liter of red wine, season with 1 table spoon of clove and cimnamon each then mix in the beetroots. Cook everything over medium heat until most of the liquid has evaporated and set aside to cool. Oil a quiche form and line it with the short pastry and fill with the beetroots. Cut 200 g of goat camembert into chunks and distribute them over the quiche. Place into the oven preheated at 160C/320F and bake for around half an hour. I served this with some delicious sweet potato wedges. As I’ve mentioned before, one thing I absolutely HATE is throwing away food. There were some sweet potatoes left that I hadn’t used during my Christmas menu and therefore I decided to incorporate them into a hearty Mac and Cheese dish. For this recipe cook 500g of pasta until they’re almost done and then take them out of the water and cool to stop the cooking process. In the same water now cook your sweet potatoes - around 3/4 of the amount of the pasta used. You can add more/less sweet potatoes depending on your taste - be aware that they add a lot of sweetness. Once you can pierce them with a thin knife with almost no resistence, drain them. Next we need a Bechamel sauce. I used ca. 80g of margarine, 80g of all purpose wheat flour and 600ml of oat milk. Generously season the sauce with salt, pepper, and nutmeg. Bring to a boil and cook it for 5 minutes while continuously stirring. This will cook out the taste of the flour. Next the sweet potatoes have to be peeled and cut into chunks. Add them into your bechamel, blend everything together and add 200g of cheese (I used mozzarella). Now it is time to taste the sauce and season more if needed. Remember that the pasta will suck up a lot of flavour so season generously! Oil up a casserole, mix the sauce with the pasta and fill the casserole. Top of with around 150g of cheese and put into the preheated oven - 180C/350F. It will take around 25 minutes, depending on how crispy you want it to be! Unfortunately the pictures did not turn out as well as I wanted, but this dish was so delicious I obviously had to share it here! This salad combines the mild taste of sweet potatoes with the earthyness of mushrooms, fruity taste of tangerines and the fresh taste of spinach. Preheat the oven to 180C/350F. Cut the 500 g of sweet potatoes into wedges, season with oil, salt, pepper and chilli powder, then spread onto onr or two baking sheet(s) and put into the oven - bake for around 20 minutes. In the meantime heat 200 g of quartered button mushrooms in a pan over medium heat with a spoon of vegetable oil. Add 200 g of baby spinach. When the sweet potatoes are done (around 20 minutes) take them out of the oven. For the dressing mix the juice of two tangerines, 50 ml olive oil, salt, pepper and a little bit of water. Cut two more tangerines into pieces, put them into a salad bowl, mix with the spinach, mushrooms and the dressing. Depending on how crunchy you like your sweet potatoes either mix them into the salad straight away or serve on top of the salad on the plates.
