i wanna eat these forever...
in Russia we call them «lazy dumplings» or “leniviye vareniki”, because they’re kind of an extra quick version of original dumplings
it took me 15 minutes to make these, literally the fastest 🥺
my grandma used to make em sweet with vanilla sugar and then top em (specifically for me) with her wild strawberry jam and yogurt, or as a savory version with cheese & chopped parsley, by also serving them with sour cream along.

grab 4 tbsp of ricotta cheese, 5 tbsp of cottage cheese, 1 egg, 4-5 tbsp of rice flour, 2 tbsp of tapioca starch, 1 tsp of turmeric, pinch of cinnamon, some dried lemon zest, some fresh lemon zest, 1 tsp of vanilla extract, 1 tsp of sugar.
mix it all together, until the dough becomes non sticky and “kneadable”.
i make these cute little balls and then boil them in boiling water for 2-3 minutes, until they float on top.
then i immediately add a piece of butter to them, some greek yogurt, some feijoa jam (the best) and blueberries (coz why not???)
