Never did I think that one could actually CRAVE salads... and it wasn’t until I started loading mine up with all my favorite add-ins that I started to🥗
What I’ve learned is that salads aren’t supposed to be boring or a chore to eat!! They don’t need to be just lettuce, a few other veggies, and dressing. Think of it more as a base, much like oatmeal or a piece of toast, then go crazy with all different kinds of flavors and toppings that you can imagine😋 .
Here are some of my favorite salad add-ins to get you inspired to make a BOMB salad: chickpeas, roasted sweet potato, quinoa, farro, cucumber, ripe tomatoes, marinated artichokes, black olives, grilled chicken, roasted broccoli, soft boiled eggs, fresh herbs (parsley, cilantro, dill), arugula, and avocado.
This combo is made with a mix of chickpeas, grape tomato, english cucumber, fresh cilantro, fresh curly parsley, onion, and homemade Mediterranean Lemon Dressing (recipe below) ... probably with a side of hummus and @foodforlifebaking pita too!😊
Mediterranean Lemon Dressing
•2 tbsp of lemon juice
•2-3 tbsp of olive oil
•2 garlic cloves, grated or FINELY chopped
•1 teaspoon of sumac
•1/2 tsp of pink salt
•1/4 tsp of black pepper
Whisk together all ingredients in a small bowl.
