Weekend pastabilities Making CACIO E PEPE for the first time at home. No butter, cream, milk, oil, or regrets. It’s always mind blowing that only 4 ingredients - pecorino cheese, fresh grind pepper, al dente pasta, and starchy pasta water can create such an amazing dish. BRAISED PORK BELLY 🥢 Made this one-pot SHOYU PORK today, a Hawaiian version of the Okinawan dish Rafute. Saucy, savory, sweet, and so ONO with a hot bowl of rice 🍚 Shōyu is the Japanese translation for soy sauce, so you’ll find items named shoyu chicken & shoyu ramen in Hawaii. Never “Soy Sauce Pork.” My all-time favorite is @alohashoyuhi - it’s what I grew up with! 🤙🏼 Recipe is from @onolicioushawaii. I doubled the recipe and the family devoured it for dinner - even Derek! Pork came out so tender and flavorful, and most of the fat renders off and separates easily. There’s a 100% chance I’ll be making this again soon. Who loves pork belly? Steak Confit 🥩 Cooked low and slow in the oven with garlic and rosemary, then finished off on a cast iron for that glorious crust. No seasonings, just simple flaky salt to finish it off 🤤 I used my newest @kamikoto Kuro Series Knife Set and I’m so impressed with their brand! Handmade from high quality steel from Honshu, Japan, each single bevel blade goes through a 19-step process to preserve its legacy and quality. I will definitely be expanding my collection and comparing all other knives to their sets 🔪 So the steak - has anyone seen this method before? I’m in no way an expert - I‘ve done the butter basting at home and enjoyed meat sous vide in restaurants. It went a little over in the oven and got to medium (I prefer med-rare). This cooked it very evenly, great crust, rich in flavor, and unbelievably TENDER. Overall, it’s a great method to try, simple to execute, but you DEFINITELY need a lot of olive oil. Thoughts?
