Noodles for Passover? No, really?? This is not only a two-ingredient recipe, this is a family favourite in Ilana's home -- and family recipes are a great way to keep loved ones nearby during Passover, and especially when social distancing. What's yours?

---- Egg Noodles
40g (¼ cup) potato starch
80ml (⅓ cup) water
Salt and pepper to taste
In a measuring jus beat the eggs, in a small bowl combine the potato starch and water, mixing until the potato starch is completely dissolved. Add the starchy water to the eggs and mix well. Season with salt and pepper.
Heat a crepe pan over medium heat, spray with non-stick coating or use a small amount of oil to lightly grease the pan.
When the pan is hot pour 2-3 tablespoons of batter onto the pan, swivel the pan in all directions ensuring that the batter is a very thin even coating of the bottom of the pan. If you have an excess batter in the pan, pour it back into the measuring jug.
Cook until the top of the crepe looks set, about 30-60 seconds, flip it over to cook for a couple of seconds and slide onto a plate. Repeat with the remaining batter.
Stack two or three crepes together, roll them up and using a sharp knife cut into thin strips. Keep tightly covered in the fridge until ready to serve.
