Chipotle Buffalo Nuggets
I quick press firm tofu. Slice it, place it on a no porous cutting board, cover with a towel, then cover with sheer pan.
Now, with clean feet, stand on the sheet pan. Give it a couple of minutes, flip the tofu and towel, and repeat.
Marinate the tofu strips. I used tamari, chipotle hot sauce @sietefoods, cider vinegar, and olive oil. Marinate 20 minutes to overnight.
Tear the tofu strips into pieces and toss with starch. Arrowroot, corn, or as I used, potato. Air fry the nuggets @375 for 12-15 minutes or until brown. Spray or brush with oil halfway through for better crisping.
While the tofu cooks, make the sauce. Coconut oil or vegan butter, chili powder, cider vinegar, tomato purée, pink salt and a touch of maple syrup. Just gently heat and whisk or blend all together. Make sure the fat of choice is melted.
When nuggets are done, toss them with the sauce and enjoy in whatever way feels right.
A wrap, a salad, over rice, chopped up on vegan nachos.
