PAPAYA. BOATS. that is all.
As you may have noticed from my stories the last few days, my latest and greatest discovery is papaya😍
I haven’t had this tropical fruit for years, but WOWW. My love for it coming back now, and this excitement is going to extend far into the summer because it is super light, HYDRATING, and makes a perfect bowl for yogurt, fruit salad, chia pudding, chilled overnight oats, granola, and whatever else you can think of!
The fruit itself is full of antioxidants that work to neutralize free radicals in the body; vitamins A, B, C, and K to increase immunity and improve skin, hair, and eye health; enzymes that aid in breaking down proteins and improve digestion; and enzymes and minerals that fight against inflammation👏🏼
Yogurt Papaya Boat
•1/2 large papaya
•3/4 cup of non-fat plain greek yogurt
•1/3 cup of sliced strawberries
•1/3 cup of @enjoygoodmoodfood vanilla almond quinoa brittle
•1 tbsp of cacao nibs
•1 tbsp of raw honey
Cut the papaya in half and use a spoon to scoop out the seeds. Fill empty space with yogurt and top with sliced strawberries, quinoa brittle, cacao nibs, and drizzle with honey. Best enjoyed outside in the sunshine😌
A papaya is ready to eat when the skin is orange and slightly soft.
