Just so flavorful and on point when you just need that sweet fixing....
Put everything in the mixer and let it do its job for 4 to 5 minutes until the dough is elastic and smooth.
Leave it to rest for 1.5 hours , roll it our, make your beignets and let it rest again for an hour.
Use a damp cloth to make sure it does not dry out and leave it in a warm spot with no wind.
Fry them for about 3 minutes each side on low heat until they are golden brown. The oil should not be too warm otherwise they will burn the outside and the inside will still be uncooked. The beignet will also become hard!
Drain them well on a paper towel and coat them with icing sugar. I like doing the top only for effect but normally you can just roll them in a bowl of icing sugar and it will do the trick!

350 g flour
40 g sugar
120 ml milk at room temperature
5 g dry yeast
5 g salt
30 g butter at room temperature
