Although I’m for sure in a constant pasta phase, I also have a mini side-phase going on right now where I’m obsessed with healthy lil treats. Hope you aren’t mad about it - my baking posts don’t do half as well as my pasta posts but they make me happy and that’s what I’m here for!!
NUT FREE healthy-ish snickerdoodle bites.
(Makes about 20 bites)
In a food processor, blend 1.5 cup gf flour (I use Pamelas) and 1 cup oat flour with 1 tsp baking powder, 1/4 cup @kweenandco granola butter, 1 tbsp cinnamon, 2 tbsp warmed coconut oil, 1/4 cup coconut palm sugar, 3/4 cup vanilla rice milk or oat milk, 1/2 tsp vanilla extract. I added a scoop of collagen powder but it’s not required.
Roll into teaspoon sized balls and flatten a tiny bit. Bake for 15 minutes at 350° F.
For the frosting: in a blender or stand mixer, combine 2 tbsp vegan butter, 1/4 cup cream cheese (I used Daiya vegan bc there’s no nuts), 1 tbsp maple syrup, 1/4 tsp vanilla extract and 1/2 tsp cinnamon.
